Loaded Mashed Potato Casserole

5 1/2 cups Mashed potatoes
1/2 cup milk
8 ozs cream cheese, softened
8 ozs sour cream
2t dried parsley
1t garlic salt
1/4t ground nutmeg
3/4 cup shredded cheddar cheese
6 slices bacon crisply cooked and crumbled

Combine all ingredients except cheese and bacon in a large mixing bowl. Beat at medium high speed with an electric mixer until smooth. Spoon into a lightly greased 13 X 9 baking dish; top with cheese and bacon. Cover and back at 350 degrees for 30 minutes. Uncover and bake 10 more minutes or until cheese melts.

To me it was better after it sit for about 15 minutes. The potatoes were real runny while they were hot.

  1. Oh man... my dh's favorite food is mashed potatoes. I might just have to try this... I'll have switch those ingredients to the lighter ones... but it should still work!
